Two Minute Eggs
Ingredients
- 2 large eggs
- Baby Spinach leaves
- 2 grape tomatoes, sliced
- 2 slices of Canadian bacon
- Non-Stick Cooking Spray
- 1 tbsp. water
- 2 ramekins
Directions
Spray ramekins with non-stick cooking spray and add one tablespoon of water. Add each ingredient in layers: place Canadian bacon in the bottom of the dish, a layer of spinach leaves, sliced tomatoes, and egg. Top with salt and pepper. Cook in the microwave on high for one to two minutes, depending on the strength of your microwave and the desired finish of your egg. I prefer a sunny side up egg, which took only about 90 seconds. Let the dish set for one minute in the microwave to set and cool the dish. Remove and scoop out with a spoon. Serve with a side of toast or fresh fruit.
Tips: This can also be made for a crowd! Use your cupcake/muffin pans, prepared with non-stick spray and bake them at 350 degrees for approximately 18 minutes for a runny yolk. Experiment with your choice of vegetables and toppings; try mushrooms, onions, fat free cheese, turkey bacon, bell peppers, or even spice it up with jalapenos!
