Quinoa Burrito Bowl

It’s a burrito bowl without a bowl full of calories!  For someone who loves Chipotle and Moe’s this substitution has been heaven sent!  Now I get to enjoy my burrito bowl without the guilt!

Ingredients 

  • 1/2  cup corn
  • 1 tomato diced

Preparation

  • Combine beans and quinoa in a bowl.  Top with corn and diced tomatoes.  Combine yogurt and lemon juice together in a small bowl; thin with water to desired consistency. Drizzle the yogurt dressing over beans and quinoa. Top with avocado, salsa and cilantro.

Want to make this the night before?

It’s simple!  Assemble the delicious quinoa burrito bowl up to 1 day in advance, with dressing on the side. To prevent avocado from browning,  just toss with a squeeze of lemon juice after dicing.
