Picadillo
Ingredients
- 1 pound browned ground beef
- 1 pound browned ground turkey
- 1 red onion, chopped
- 2 green bell peppers, chopped
- 2 cloves of garlic, minced
- 16 oz, no salt added tomato sauce (Hunts)
- 3 tsp cumin
- 1 tbs cliantro
- 2 bay leaves
- 12 low sodium olives, quartered
- 1 medium tomato, diced
- 2 bags of Kroger boil in bag brown rice
Preparation
- Brown ground turkey and beef, drain any excess liquid or fat
- Add remaining ingredients and simmer
- While simmering the meat mixture, cool rice according to package directions
- Drain rice and add to meat mixture.
Tips
This a warm fall Cuban dish. Add some red pepper flakes if you want to add some heat to this dish! Serve with a side salad for a complete meal.
