Ingredients

  • 1 pound browned ground beef
  • 1 pound browned ground turkey
  • 1 red onion, chopped
  • 2 green bell peppers, chopped
  • 2 cloves of garlic, minced
  • 16 oz, no salt added tomato sauce (Hunts)
  • 3 tsp cumin
  • 1 tbs cliantro
  • 2 bay leaves
  • 12 low sodium olives, quartered
  • 1 medium tomato, diced
  • 2 bags of Kroger boil in bag brown rice

Preparation

  1. Brown ground turkey and beef, drain any excess liquid or fat
  2. Add remaining ingredients and simmer
  3. While simmering the meat mixture, cool rice according to package directions
  4. Drain rice and add to meat mixture.

Tips

This a warm fall Cuban dish.  Add some red pepper flakes if you want to add some heat to this dish!  Serve with a side salad for a complete meal.
