Pasta e Fagioli

Ingredients

  • 32 oz fat free chicken broth
  • 2 medium carrots, diced
  • 1 c. onion, chopped
  • 1 tsp black pepper
  • 1 tsp salt
  • 3 cloves garlic, diced
  • 5 stalks of celery, diced
  • 1 cup pasta
  • 15 oz canned diced tomatoes
  • 1 tbsp Italian seasoning
  • 1 lb lean ground beef or turkey
  • 15 oz tomato sauce
  • 2 tbsp basil
  • 15 oz northern beans, drained and rinsed
  • 15 oz red beans, drained and rinsed

Preparation

Brown meat with veggies and garlic.  Add tomatoes, sauce, and broth, bring to a simmer.  Add pasta.  When pasta is tender add beans, and seasonings.  Serve with a side of crusty bread (100 calorie steak rolls) or salad.
