No Bake Pumpkin Pie Cheesecake
- 1 tbps. pumpkin pie spice
- 1 container light cool whip
- 1 can pumpkin
- 1 box instant vanilla pudding
Combine pumpkin pie spice, pumpkin, and vanilla pudding. Fold in cool whip. Chill mixture.
You can serve this alone, as a dip with graham crackers, or in a reduced calorie/fat graham cracker crust! Feel free to substitute the pudding with a sugar free version for lower calories as well. Maybe even get fancy and serve them in miniature pumpkins!
