Lobster and Lemon Ravioli

Ingredients

  • 2 pk Lobster Ravioli (found at Costco)
  • 2 slices low sodium bacon, diced, fried, and drained
  • 1 cup frozen peas
  • 1 tsp lemon juice
  • 2 tsp. lemon zest
  • 2 tbsp. I Can’t Believe it’s Not Butter

Preparation

Bring water to a boil and add pasta.  Dice and fry bacon and drain.  Add butter to heated pan with lemon juice, zest, salt and pepper along with ¼ c. of water. Add peas and bring to a low simmer.  Drain cooked ravioli and toss with peas and lemon sauce.  Upon serving, top with diced bacon, parsley, and a sprinkle of parmesan cheese.  Add a side salad for a complete meal.
