Jicama Slaw
Ingredients
1 jicama bulb, peeled & grated
1 red bell pepper, diced
1/2 Jalapeno seeded, diced
1 shallot, diced
1 sarrot, grated or chopped
Dressing Ingredients:
2 limes, juiced
1 tsp salt
1/2 tsp pepper
1 1/2 tsp cilantro
1/2 tsp basil
1 tsp celery seed
1/4 cup vinegar ( apple cider or light vinegar)
2 Tbsp honey
Preparation
Grate the Jicama first and squeeze out excess water. Place all the vegetables in a large bowl. Mix the dressing ingredients together and toss with the vegetables. Chill for 30 minutes, allowing for all the flavors to infuse together.
Tips
Jimca is also known as celery root. Although it has very little flavor on its own, it packs nutrition, and colorful texture in this crowd pleasing recipe. It can be challenging to peel, so I recommend cutting it in half and using a vegetable peeler. It’s also fun to slice into small sticks, which are great for dips like hummus or veggie dip. It’s sure to be a huge hit however prepared, but Jicama slaw is an E4M Fan Fave! Enjoy 😉
