Impossible Pumpkin Pie
Ingredients
- 3/4 cup sweetener (½ sugar and ½ Lakanto Monkfruit sweetener)
- ½ cup Heart Healthy Bisquick
- 1 can low fat evaporated milk
- 2 eggs
- 1 – 16 oz. puree pumpkin
- 2 ½ tsp. Pumpkin pie spice
- 2 tsp. Vanilla
- 2 tbsp. Unsweetened applesauce
Preparation
- Preheat oven to 350
- Spray 9” pie plate with nonstick cooking spray
- Mix all ingredients and pour into the prepared pie plate
- Bake for 55 minutes
Tips
Don’t worry, you won’t miss the crust one bit! This pie packs all the taste without the guilt. The melted butter is replaced with unsweetened applesauce and half of the sugar with monkfruit sweetener, providing a lower calorie treat!
Serve with light whipped cream or cool whip.
