Easy and Healthy E4M Cookie Cake

Ingredients

    • 3/4 cup whole wheat pastry flour
    • 1 cup old fashioned oats
    • 1/3 cup cane sugar
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking soda
    • 3 tablespoons canola oil or melted coconut oil
    • 6 tablespoons  vanilla almond milk
    • 1/6oz container vanilla Greek yogurt
    • Assorted berries, for garnish

     

Preparation

  1. Preheat the oven to 350 degrees F.
  2. In a blender, combine all dry ingredients. 
  3. Transfer to bowl and add canola oil and almond milk, stir until a dough forms. Pat the dough onto a greased, cookie sheet
  4. Bake for 25 minutes, until the edges are golden brown and the center is set.  Cool.
  5. Spread the Greek yogurt evenly over the cake and top with berries in the pattern of a flag.
