Breakfast Quesadilla
Ingredients
- 1- Ole Extreme Wellness Wrap
- ½ oz shredded cheese
- 2 tbsp fresh salsa
- ¼ cup diced peppers and onions
- 1/2 oz black beans, rinsed and drained
- 3 tbsp. egg beaters
Preparation
Saute onions, peppers, and salsa and set aside. Spray pan with nonstick cooking spray and add egg beaters. Cook on medium – heat. Do NOT flip the egg, allow it to cook until set. Place the wrap on top of the egg then flip (you can use a plate to cover the skillet to flip). Add veggies and cheese, and fold the wrap in half. Allow the wrap to brown on both sides.
Tips
Add a dollop of fresh salsa, fat free sour cream, or Greek yogurt. There’s even room for a size of avocado or guacamole.
